The holidays reminds me of listening to my karaoke-crazed sister’s concerts while devouring mounds of tamales. But can you believe after all these years of eating tamales I don’t know how to make them?! I’m not alone. I know you’re out there too! Well, my very shy mother came on the set of Me Gusta to show us how to make tamales. We made green chile & cheese tamales (Queso con Rajas), and I’ve already eaten over a dozen! This episode is a doozy so put on an apron and get ready to wrap!
Ingredients (Makes 70 tamales)
10 pounds of already prepared masa
dry corn husks
7 Poblano chiles (also known as pasilla) – If you like extra heat add a finely diced roasted serrano chile to the sauce.
7 roma tomatoes
2 packets of mozzarella cheese
1 large roasted garlic clove
salt to taste
Try making some Orange Plum Tomato Sauce. Goes great with tamales!
